- ½ cup cornstarch
- ⅓ cup low-sodium soy sauce

- 2 tbsp rice vinegar
- 1 tsp sesame oil
- ½ cup low-sodium chicken broth
- 2 tbsp chili paste (adjust for spice preference)
- 2 tbsp peanut or vegetable oil (for frying)
Instructions
- Cut chicken into bite-sized pieces and season lightly with salt and pepper.
- In a bowl, mix cornstarch with soy sauce until smooth. Add garlic and ginger; coat the chicken well.
- Heat oil in a large skillet over medium-high heat. Fry chicken in batches until golden brown, about 5-7 minutes.
- In another bowl, whisk together soy sauce, vinegar, sugar, chili paste, and broth. Pour over cooked chicken.
- Simmer on low heat for 3-5 minutes until the sauce thickens slightly.
- Garnish with sliced green onions before serving hot over rice or noodles.
Notes
- For extra crunch, add bell peppers or broccoli to the stir-fry.
- Substitute chicken with tofu or shrimp for a different protein option.
