Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 cups panko breadcrumbs
  • 2 large eggs
  • 2 tsp garlic powder
  • 4 tbsp Sriracha sauce (adjust to taste)
  • ½ cup mayonnaise
  • 2 green onions, sliced (for garnish)
  • Cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix the flour and garlic powder. In another bowl, beat the eggs until frothy. In a third bowl, place the panko breadcrumbs with a pinch of salt.
  3. Dip each chicken piece first in the flour mixture, then in egg, and finally coat with panko breadcrumbs.
  4. Place the coated chicken on the baking sheet and lightly spray with cooking oil. Bake for 20-25 minutes until golden brown and crispy.
  5. Meanwhile, mix mayonnaise and Sriracha in a small bowl; adjust the spice level as desired.
  6. Once baked, toss the chicken in Sriracha mayo until coated and garnish with green onions and cilantro before serving.
