Ingredients

  • 4 cups fresh spinach
  • 8 oz cream cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Boil the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes.
  2. Sauté Garlic and Spinach: In a skillet over medium heat, heat olive oil and add minced garlic. Sauté for 1 minute, then add spinach until wilted (about 2 minutes).
  3. Create the Creamy Sauce: Add cream cheese to the skillet and stir until melted. Gradually pour in reserved pasta water for desired creaminess.
  4. Combine Everything: Toss cooked gnocchi into the sauce with Parmesan cheese, stirring gently to coat.
  5. Season Up: Sprinkle with dried herbs, salt, and pepper to taste.
  6. Serve Immediately: Plate while hot, garnishing with extra Parmesan if desired.
