Ingredients

  • 9 oz fresh cheese tortellini
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or whole milk)
  • 3 cloves garlic, minced
  • 2 cups fresh spinach or kale
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • Freshly cracked black pepper to taste
  • 1 tsp dried Italian herbs (oregano and basil blend)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
  2. Pour in vegetable broth and bring to a simmer. Add spinach or kale until wilted.
  3. Stir in fresh tortellini; cook according to package instructions until they float.
  4. Mix in heavy cream, black pepper, and dried herbs; stir well to combine.
  5. Remove from heat and top each bowl with freshly grated Parmesan cheese before serving.
