Instructions
- Heat olive oil in a skillet over medium-high heat. Add diced chicken, cumin, and chili powder; cook until fully cooked (5-7 minutes).
- Stir in chopped bell peppers and onion; sauté until tender (about 3-4 minutes).
- On one half of each tortilla, layer the chicken mixture and top with shredded cheese. Fold the tortilla over.
- Cook each folded quesadilla in the skillet until golden brown on both sides (3-4 minutes per side).
- Cool slightly before slicing into wedges and serve with salsa or guacamole.
