  • 2 cups basmati rice

  • 2 tbsp garlic & ginger paste
  • 1 tsp cumin seeds
  • 4 green cardamom pods
  • 4 whole cloves
  • 2 tomatoes, chopped
  • ½ cup plain yogurt
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh cilantro, chopped
  • 3 tbsp ghee or cooking oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping onions, tomatoes, mint, and cilantro.
  2. In a large pot, heat ghee or oil over medium heat. Sauté onions until golden brown.
  3. Add garlic and ginger paste; cook for an additional 1–2 minutes until fragrant.
  4. Stir in chicken thighs, cumin, cardamom, cloves, salt, and pepper. Cook until chicken starts to brown.
  5. Mix in chopped tomatoes and yogurt; simmer until tomatoes soften.
  6. Add drained basmati rice along with enough water (double the volume of rice). Stir gently to combine.
  7. Cover tightly; cook on low heat for about 25–30 minutes or until liquid is absorbed.
  8. Let sit covered for 10 minutes before fluffing with a fork; garnish with fresh mint and cilantro before serving.
