- 1 lb boneless chicken thighs
- 2 cups basmati rice
- 2 medium onions, thinly sliced
- 2 tbsp garlic & ginger paste
- 1 tsp cumin seeds
- 4 green cardamom pods
- 4 whole cloves
- 2 tomatoes, chopped
- ½ cup plain yogurt
- ¼ cup fresh mint, chopped
- ¼ cup fresh cilantro, chopped
- 3 tbsp ghee or cooking oil
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping onions, tomatoes, mint, and cilantro.
- In a large pot, heat ghee or oil over medium heat. Sauté onions until golden brown.
- Add garlic and ginger paste; cook for an additional 1–2 minutes until fragrant.
- Stir in chicken thighs, cumin, cardamom, cloves, salt, and pepper. Cook until chicken starts to brown.
- Mix in chopped tomatoes and yogurt; simmer until tomatoes soften.
- Add drained basmati rice along with enough water (double the volume of rice). Stir gently to combine.
- Cover tightly; cook on low heat for about 25–30 minutes or until liquid is absorbed.
- Let sit covered for 10 minutes before fluffing with a fork; garnish with fresh mint and cilantro before serving.

- You can substitute chicken with shrimp or tofu for a different twist on this classic dish.
