Ingredients

  • 1 lb boneless chicken thighs, diced
  • 2 cups basmati rice, rinsed
  • 2 medium onions, thinly sliced
  • 2 tbsp garlic-ginger paste
  • 2 medium tomatoes, chopped
  • 1 cup plain yogurt
  • 2 tbsp biryani masala spice mix
  • 1/4 tsp saffron threads (optional)
  • Fresh cilantro and mint, chopped for garnish
  • 3 tbsp cooking oil or ghee
  • Salt to taste
  • 4 cups water or broth

Instructions

  1. Heat oil or ghee in a large pot over medium heat. Add sliced onions and sauté until golden brown.
  2. Stir in diced chicken; sear until lightly browned on all sides.
  3. Add garlic-ginger paste and chopped tomatoes; cook until tomatoes soften.
  4. Add rinsed basmati rice and biryani masala spice mix; stir gently to combine.
  5. Pour in water or broth, season with salt, and bring to a gentle boil.
  6. Reduce heat to low, cover tightly, and simmer for 20–25 minutes without lifting the lid.
  7. Remove from heat and let sit covered for another 10 minutes before fluffing with a fork.
