- 1 lb boneless chicken thighs, diced
- 2 cups basmati rice, rinsed
- 2 medium onions, thinly sliced
- 2 tbsp garlic-ginger paste
- 2 medium tomatoes, chopped
- 1 cup plain yogurt
- 2 tbsp biryani masala spice mix
- 1/4 tsp saffron threads (optional)
- Fresh cilantro and mint, chopped for garnish
- 3 tbsp cooking oil or ghee
- Salt to taste
- 4 cups water or broth
Instructions
- Heat oil or ghee in a large pot over medium heat. Add sliced onions and sauté until golden brown.
- Stir in diced chicken; sear until lightly browned on all sides.
- Add garlic-ginger paste and chopped tomatoes; cook until tomatoes soften.
- Add rinsed basmati rice and biryani masala spice mix; stir gently to combine.
- Pour in water or broth, season with salt, and bring to a gentle boil.
- Reduce heat to low, cover tightly, and simmer for 20–25 minutes without lifting the lid.
- Remove from heat and let sit covered for another 10 minutes before fluffing with a fork.
