  • 2 lbs boneless skinless chicken thighs

  • 45 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • Chipotle powder (to taste)
  • Salt and pepper (to taste)
  • 1 cup water or broth

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped onion; sauté until softened (3-4 minutes).
  2. Season chicken thighs generously with salt and pepper and add to the skillet. Sprinkle cumin, paprika, and chipotle powder over the chicken.
  3. Pour in enough water or broth to cover halfway up the sides of the chicken (about 1 cup). Cover and simmer on low heat for 30-40 minutes until chicken is tender.
  4. Remove chicken from skillet and shred using two forks. Return shredded chicken to the skillet to soak up the juices before serving.
