Description
Eggplant Parmesan is a comforting Italian classic featuring layers of crispy eggplant, rich marinara sauce, and gooey cheese. This easy recipe is perfect for any occasion.
Ingredients
Scale
- 2 medium eggplants, sliced into 1/4-inch rounds
- 1 cup flour for dredging
- 2 cups marinara sauce
- 8 oz fresh mozzarella cheese, sliced
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves
- 1/2 cup extra virgin olive oil for frying
- Salt and pepper to taste
Instructions
- Prepare the eggplants by salting the slices and letting them sit for 30 minutes to draw out moisture.
- Heat olive oil in a skillet over medium heat. Dredge each eggplant slice in flour and fry until golden brown on both sides.
- In a baking dish, layer marinara sauce, fried eggplants, mozzarella slices, and grated Parmesan until all ingredients are used.
- Preheat your oven to 375°F (190°C). Cover the dish with foil and bake for 25 minutes. Remove the foil and bake an additional 15 minutes until bubbly and golden.
- Let rest for 10 minutes before garnishing with fresh basil. Serve warm.
Notes
- For extra flavor, consider adding layers of sautéed spinach or mushrooms.
- Allowing the dish to rest enhances the flavors significantly.
- Store leftovers in an airtight container; reheat in the oven at 350°F.
