Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup bell peppers, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with nonstick spray.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Fold in the chopped spinach and diced bell peppers.
  4. Add the shredded cheese and mix gently.
  5. Pour the mixture into the prepared muffin tin, filling each cup two-thirds full.
  6. Bake for 18-20 minutes, or until the muffins are puffed and golden brown.
  7. Allow to cool for a few minutes before removing from the tin.
