Description

Ingredients

  • 1 ½ cups chocolate sandwich cookies, crushed
  • 5 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon mint extract
  • ¼ cup unsweetened cocoa powder
  • Green food coloring (optional)
  • ½ cup chocolate chips for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed cookies with melted butter and press into a 9-inch springform pan.
  2. Bake crust for 10 minutes; allow to cool.
  3. Beat cream cheese and sugar until smooth. Add heavy cream, cocoa powder, and mint extract, mixing well.
  4. If desired, add green food coloring until the preferred color is achieved.
  5. Pour filling into the cooled crust, smoothing the top. Refrigerate for at least 4 hours or overnight.
