- 1 ½ cups chocolate sandwich cookies, crushed
- 5 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon mint extract
- ¼ cup unsweetened cocoa powder
- Green food coloring (optional)
- ½ cup chocolate chips for garnish
Instructions
- Preheat oven to 350°F (175°C). Mix crushed cookies with melted butter and press into a 9-inch springform pan.
- Bake crust for 10 minutes; allow to cool.
- Beat cream cheese and sugar until smooth. Add heavy cream, cocoa powder, and mint extract, mixing well.
- If desired, add green food coloring until the preferred color is achieved.
- Pour filling into the cooled crust, smoothing the top. Refrigerate for at least 4 hours or overnight.
Notes
- Use room temperature cream cheese to avoid lumps.
- For added texture, top with crushed mint candies or swap semi-sweet chocolate for dark chocolate.
- Store leftovers in an airtight container in the fridge for up to 5 days.
