Description

Delight in these fluffy pumpkin cinnamon rolls, perfectly spiced and sweet, making them an irresistible autumn treat for breakfast or dessert.

Ingredients

Scale
  • 1 cup pumpkin puree
  • 4 cups all-purpose flour
  • 2 tablespoons active dry yeast
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon (plus more for filling)
  • 1/2 teaspoon salt
  • 1 cup milk (warmed)
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 cup powdered sugar (for icing)
  • 1 teaspoon vanilla extract

Instructions

  1. Warm the milk until lukewarm, then combine with yeast and sugar. Let sit until frothy (5–10 minutes).
  2. In a mixing bowl, combine flour, sugar, cinnamon, and salt. Create a well in the center; add the yeast mixture, melted butter, and eggs. Mix until combined.
  3. Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise in a warm place until doubled (about 1 hour).
  4. Prepare the filling by mixing softened butter, brown sugar, and cinnamon in a small bowl until creamy.
  5. Punch down the risen dough and roll into a rectangle on a floured surface. Spread filling evenly across the dough and roll tightly into a log. Slice into approximately 12 equal pieces.
  6. Arrange rolls in a greased baking dish, cover again, and let rise until fluffy (another hour). Preheat oven to 350°F (175°C).
  7. Bake for 25–30 minutes until golden brown. While cooling, prepare icing by mixing powdered sugar with vanilla extract and just enough milk for desired consistency; drizzle over rolls.

Notes

  • Feel free to experiment with spices like nutmeg for added flavor.
  • For extra texture, consider adding chopped nuts to the filling.
  • Store leftovers in an airtight container at room temperature for up to three days.
