  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ½ cup granulated sugar (for filling)
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup freshly squeezed lime juice
  • 1 cup cherries, pitted and halved (fresh or drained canned)
  • ½ cup pistachios, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a greased springform pan.
  3. Bake the crust for about 8-10 minutes until golden brown. Let cool completely.
  4. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Blend in sour cream, lemon juice, and lime juice until creamy.
  5. Gently fold in cherries and pistachios.
  6. Pour the filling over the cooled crust and bake at 325°F (160°C) for 50-60 minutes until set but slightly jiggly in the center.
  7. Allow cheesecake to cool at room temperature before refrigerating for at least four hours.
