- ¼ cup freshly squeezed lime juice

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a greased springform pan.
- Bake the crust for about 8-10 minutes until golden brown. Let cool completely.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Blend in sour cream, lemon juice, and lime juice until creamy.
- Gently fold in cherries and pistachios.
- Pour the filling over the cooled crust and bake at 325°F (160°C) for 50-60 minutes until set but slightly jiggly in the center.
- Allow cheesecake to cool at room temperature before refrigerating for at least four hours.
