  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 cup Greek yogurt
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup tahini paste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice (for sauce)
  • 1/2 tsp garlic powder

Instructions

  1. In a bowl, mix Greek yogurt, minced garlic, cumin, coriander, paprika, olive oil, lemon juice, salt, and pepper until well combined.
  2. Coat the chicken thighs thoroughly in the marinade. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat grill or skillet over medium-high heat. Cook marinated chicken thighs for about 5-7 minutes per side until fully cooked and charred.
  4. Let the chicken rest for a few minutes before slicing it into thin strips.
  5. Warm pita or flatbread, layer sliced chicken with fresh vegetables, and drizzle with tahini sauce.
