Description

Ingredients

  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup whole milk (or almond milk)
  • 2 tsp pure vanilla extract
  • 2 cups heavy cream
  • 1 cup semisweet chocolate chips
  • ¼ cup cornstarch
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, whisk together the cake flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add eggs one at a time to the butter mixture; mix well after each addition. Stir in vanilla extract.
  5. Gradually combine dry ingredients with the wet batter while alternating with milk until just blended.
  6. Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. For the custard filling, whisk together milk, sugar, cornstarch, and salt in a saucepan over medium heat until thickened. Remove from heat and stir in vanilla extract.
  8. For the ganache, heat heavy cream until hot but not boiling; pour over chocolate chips and stir until smooth.
  9. Once cooled, stack one cake layer on a serving plate, spread custard over it, then add the second layer on top. Pour ganache over the top to let it drip down the sides.
