- 9 lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 medium zucchini, thinly sliced
- 2 cups fresh spinach
- 2 cups marinara sauce
- 1 cup chopped bell peppers (mix of red and yellow)
- 2 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente; drain and cool under cold water.
- In a skillet, sauté chopped bell peppers, zucchini, and spinach over medium heat for about 5 minutes until softened.
- In a bowl, mix ricotta cheese with Italian seasoning until well combined.
- In an oven-safe dish, spread a layer of marinara sauce at the bottom. Layer noodles, half of the ricotta mixture, sautéed veggies, and repeat layers until all ingredients are used.
- Top with shredded mozzarella cheese and sprinkle with Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
Notes
- Substitute zucchini with your favorite vegetables like mushrooms or eggplant for variety.
- To lighten the dish, use low-fat cheeses or skip the top layer of mozzarella.
