Description

Veggie lasagna is a colorful and delicious way to enjoy layers of fresh vegetables, creamy cheese, and hearty noodles. This satisfying dish is perfect for any occasion.


Ingredients

  • 9 lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 medium zucchini, thinly sliced
  • 2 cups fresh spinach
  • 2 cups marinara sauce
  • 1 cup chopped bell peppers (mix of red and yellow)
  • 2 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente; drain and cool under cold water.
  3. In a skillet, sauté chopped bell peppers, zucchini, and spinach over medium heat for about 5 minutes until softened.
  4. In a bowl, mix ricotta cheese with Italian seasoning until well combined.
  5. In an oven-safe dish, spread a layer of marinara sauce at the bottom. Layer noodles, half of the ricotta mixture, sautéed veggies, and repeat layers until all ingredients are used.
  6. Top with shredded mozzarella cheese and sprinkle with Parmesan.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.

Notes

  • Substitute zucchini with your favorite vegetables like mushrooms or eggplant for variety.
  •  To lighten the dish, use low-fat cheeses or skip the top layer of mozzarella.
