Description

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup fresh parsley leaves
  • 2 tsp ground cumin
  • 3 garlic cloves, minced
  • 2 tbsp olive oil (plus more for brushing)
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a food processor, blend chickpeas, parsley, garlic, cumin, salt, and pepper until slightly chunky.
  3. Transfer the mixture to a bowl and mix in flour and baking powder until a dough-like consistency forms.
  4. Scoop tablespoon-sized portions onto the baking sheet and shape them into balls or patties.
  5. Lightly brush each falafel with olive oil and bake for 25-30 minutes, flipping halfway through for even browning.
  6. Serve warm with tahini sauce or in pita pockets filled with fresh veggies.
