  • 1 lb ground turkey or chicken
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • ¼ cup fresh cilantro, chopped
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • 1 cup salsa

Instructions

  1. Preheat your oven to 400°F (200°C) and scrub the sweet potatoes under running water.
  2. Bake the sweet potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
  3. In a skillet over medium heat, brown the ground turkey or chicken for about 5-7 minutes until no longer pink.
  4. Add taco seasoning and black beans to the skillet, stirring well; cook for an additional 3-5 minutes.
  5. While the filling cooks, chop the cilantro and prepare your toppings.
  6. Once baked, slice each sweet potato lengthwise and fluff the insides with a fork before spooning in the meat mixture generously.
  7. Top with shredded cheese while hot, then add salsa and a dollop of sour cream or Greek yogurt to serve.
