- ½ cup sour cream or Greek yogurt
- 1 cup salsa
Instructions
- Preheat your oven to 400°F (200°C) and scrub the sweet potatoes under running water.
- Bake the sweet potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
- In a skillet over medium heat, brown the ground turkey or chicken for about 5-7 minutes until no longer pink.
- Add taco seasoning and black beans to the skillet, stirring well; cook for an additional 3-5 minutes.
- While the filling cooks, chop the cilantro and prepare your toppings.
- Once baked, slice each sweet potato lengthwise and fluff the insides with a fork before spooning in the meat mixture generously.
