Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice or quinoa
  • 1 cup low-sodium tomato sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ cup shredded mozzarella or cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Prepare bell peppers by slicing off the tops and removing seeds. Chop tops to add to filling if desired.
  3. In a skillet over medium heat, sauté onion and garlic until translucent (3-4 minutes).
  4. Add ground turkey to the skillet; cook until browned (5-7 minutes).
  5. Mix in cooked rice or quinoa, tomato sauce, cumin, and paprika. Heat through (about 2 minutes).
  6. Stuff each pepper generously with the turkey mixture. Place upright in the baking dish.
  7. Cover with foil and bake for 25 minutes. Remove foil, add cheese if using, and bake uncovered for an additional 10-15 minutes until bubbly.

Notes

  • Swap ground turkey for ground chicken for a different flavor.
  • For a vegetarian option, use quinoa mixed with black beans instead of meat.
