- 2 tsp olive oil
- 1 cup diced bell peppers (red and yellow)
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup long grain white rice, rinsed
- 2 cups low-sodium chicken broth
- 2 tbsp Southwest seasoning blend
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sauté onions and bell peppers until soft, about 5 minutes.
- Add diced chicken and minced garlic; cook until chicken is golden brown, about 6-8 minutes.
- Stir in the rinsed rice, then pour in the chicken broth and add the Southwest seasoning. Bring to a gentle boil.
- Reduce heat to low, cover tightly, and simmer for about 20 minutes until the rice absorbs all the liquid.
- Remove from heat and stir in lime juice and chopped cilantro before serving.
