Description

Ingredients

  • 34 boneless skinless chicken breasts
  • 2 tsp olive oil
  • 1 cup diced bell peppers (red and yellow)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup long grain white rice, rinsed
  • 2 cups low-sodium chicken broth
  • 2 tbsp Southwest seasoning blend
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté onions and bell peppers until soft, about 5 minutes.
  2. Add diced chicken and minced garlic; cook until chicken is golden brown, about 6-8 minutes.
  3. Stir in the rinsed rice, then pour in the chicken broth and add the Southwest seasoning. Bring to a gentle boil.
  4. Reduce heat to low, cover tightly, and simmer for about 20 minutes until the rice absorbs all the liquid.
  5. Remove from heat and stir in lime juice and chopped cilantro before serving.
