  • 4 cups vegetable broth
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 2 tbsp sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • 2 tbsp toasted sesame seeds

Instructions

  1. Bring a large pot of salted water to boil. Cook the soba noodles for 4-5 minutes until tender but firm. Drain and rinse under cold water.
  2. In a saucepan, heat vegetable broth over medium heat. Stir in soy sauce and sesame oil until combined; let simmer.
  3. In a skillet, add a splash of sesame oil and sauté bell peppers and snap peas for about 3-5 minutes until slightly softened but still crisp.
  4. Add the drained soba noodles to the skillet with sautéed vegetables. Pour in the broth mixture and toss gently to combine.
