- 4 cups vegetable broth
- 1 cup bell peppers, sliced
- 1 cup snap peas
- 2 tbsp sesame oil
- 3 tbsp low-sodium soy sauce
- 2 green onions, chopped
- 2 tbsp toasted sesame seeds
Instructions
- Bring a large pot of salted water to boil. Cook the soba noodles for 4-5 minutes until tender but firm. Drain and rinse under cold water.
- In a saucepan, heat vegetable broth over medium heat. Stir in soy sauce and sesame oil until combined; let simmer.
- In a skillet, add a splash of sesame oil and sauté bell peppers and snap peas for about 3-5 minutes until slightly softened but still crisp.
- Add the drained soba noodles to the skillet with sautéed vegetables. Pour in the broth mixture and toss gently to combine.
- Serve in bowls or plates, garnishing with chopped green onions and toasted sesame seeds.
