Ingredients

  • 1 large ripe mango, diced

  • Juice of 2 limes (about 1/4 cup)
  • 1 jalapeño pepper, diced (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat (375°F/190°C).
  2. In a bowl, mix olive oil, salt, pepper, and any preferred spices. Coat the chicken breasts thoroughly.
  3. Grill the chicken for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  4. While the chicken grills, combine mango, red onion, jalapeño (if using), cilantro, and lime juice in a bowl to make the salsa.
  5. Once grilled, top each chicken breast with mango salsa and serve immediately.
