- 1 red bell pepper, sliced
- 1 large yellow onion, diced
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- ½ cup fresh basil leaves
- Salt and pepper to taste
Instructions
- 1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat.
- 2. Sauté chicken for 6-7 minutes per side until golden brown and cooked through (165°F internal temperature). Remove from skillet to rest.
- 3. In the same skillet, add diced onion and cook for 3-4 minutes until translucent.
- 4. Add sliced red bell pepper and zucchini; cook for another 5 minutes until tender but crisp.
- 5. Stir in minced garlic and dried oregano; cook for about 30 seconds until fragrant.
- 6. Return chicken to the skillet along with halved cherry tomatoes. Cook for an additional 2 minutes to reheat.
- 7. Top with fresh basil before serving.
