Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons extra virgin olive oil
  • 1 red bell pepper, sliced
  • 1 large yellow onion, diced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • ½ cup fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat.
  2. 2. Sauté chicken for 6-7 minutes per side until golden brown and cooked through (165°F internal temperature). Remove from skillet to rest.
  3. 3. In the same skillet, add diced onion and cook for 3-4 minutes until translucent.
  4. 4. Add sliced red bell pepper and zucchini; cook for another 5 minutes until tender but crisp.
  5. 5. Stir in minced garlic and dried oregano; cook for about 30 seconds until fragrant.
  6. 6. Return chicken to the skillet along with halved cherry tomatoes. Cook for an additional 2 minutes to reheat.
  7. 7. Top with fresh basil before serving.
