Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
- Spread the cubed sweet potatoes in a single layer in the baking dish. Drizzle with melted butter and sprinkle with salt.
- Roast for 25-30 minutes until the sweet potatoes are tender.
- While they roast, toast the walnuts in a dry skillet over medium heat for about 5 minutes until fragrant.
- Remove sweet potatoes from the oven, stir in maple syrup, cinnamon, and toasted walnuts.
- Return to the oven for an additional 10-15 minutes until everything is caramelized and golden brown.
- Let cool slightly before serving, garnishing with more cinnamon if desired.
