Description

Ingredients

  • 2 large sweet potatoes (about 1.5 lbs), peeled and cubed
  • 1 cup raw walnuts, coarsely chopped
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Spread the cubed sweet potatoes in a single layer in the baking dish. Drizzle with melted butter and sprinkle with salt.
  3. Roast for 25-30 minutes until the sweet potatoes are tender.
  4. While they roast, toast the walnuts in a dry skillet over medium heat for about 5 minutes until fragrant.
  5. Remove sweet potatoes from the oven, stir in maple syrup, cinnamon, and toasted walnuts.
  6. Return to the oven for an additional 10-15 minutes until everything is caramelized and golden brown.
  7. Let cool slightly before serving, garnishing with more cinnamon if desired.
