Description

Lemon Herb Roasted Chicken is a succulent dish infused with zesty lemon and aromatic herbs, making it the perfect centerpiece for any gathering.


Ingredients

  • 45 lb whole chicken
  • 2 fresh lemons
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry.
  3. In a bowl, whisk together olive oil, minced garlic, juice and zest of two lemons, chopped herbs, salt, and pepper.
  4. Generously rub half of the marinade all over the chicken, including underneath the skin.
  5. Stuff the cavity with lemon halves and extra herb sprigs.
  6. Place the chicken in a roasting pan breast-side up and roast for about 1 hour 15 minutes or until juices run clear.
