- 4–5 lb whole chicken
- 2 fresh lemons
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry.
- In a bowl, whisk together olive oil, minced garlic, juice and zest of two lemons, chopped herbs, salt, and pepper.
- Generously rub half of the marinade all over the chicken, including underneath the skin.
- Stuff the cavity with lemon halves and extra herb sprigs.
- Place the chicken in a roasting pan breast-side up and roast for about 1 hour 15 minutes or until juices run clear.
Notes
- Marinating overnight enhances flavor.
- Feel free to add vegetables like potatoes or carrots for a complete meal.
- Use a meat thermometer; chicken should reach an internal temperature of 165°F.
