- 9 lasagna noodles
- 1 cup ricotta cheese
- 1½ cups shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 2 cups marinara sauce
- ¼ cup fresh basil leaves, chopped
- 2 garlic cloves, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles in salted boiling water until al dente. Drain and set aside.
- In a bowl, mix ricotta cheese, half of the mozzarella, spinach, minced garlic, salt, pepper, and basil until well combined.
- Lay cooked noodles flat and spoon about 2-3 tablespoons of filling onto each noodle. Roll tightly and place seam-side down in a baking dish.
- Pour marinara sauce over the rolls and sprinkle with remaining mozzarella.
- Cover with aluminum foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly and golden brown.
Notes
- For a lighter option, substitute ricotta with cottage cheese.
- Add red pepper flakes for a spicy kick.
- Ensure not to overfill the rolls to avoid messy spills during baking.
