- 1 lb lean ground beef
- 4 green onions, chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 medium carrots, thinly sliced
- 1 cup bell peppers, sliced (variety of colors)
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 2 cups cooked jasmine or brown rice
Instructions
- Cook rice according to package instructions; set aside.
- In a large skillet over medium heat, add oil and sauté minced garlic and grated ginger for 1-2 minutes until fragrant.
- Add ground beef; cook until browned and no longer pink, breaking it apart as it cooks.
- Stir in sliced carrots and bell peppers; cook for another 3-4 minutes until veggies are tender yet crisp.
- Pour in soy sauce and sesame oil; mix well to combine.
- Serve hot by spooning rice into bowls and topping with the beef mixture. Garnish with green onions.
