Description

Korean Beef Bowls are a delightful fusion of savory ground beef, fresh vegetables, and fluffy rice, perfect for a quick meal that warms the heart.


Ingredients

  • 1 lb lean ground beef
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 medium carrots, thinly sliced
  • 1 cup bell peppers, sliced (variety of colors)
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 cups cooked jasmine or brown rice

Instructions

  1. Cook rice according to package instructions; set aside.
  2. In a large skillet over medium heat, add oil and sauté minced garlic and grated ginger for 1-2 minutes until fragrant.
  3. Add ground beef; cook until browned and no longer pink, breaking it apart as it cooks.
  4. Stir in sliced carrots and bell peppers; cook for another 3-4 minutes until veggies are tender yet crisp.
  5. Pour in soy sauce and sesame oil; mix well to combine.
  6. Serve hot by spooning rice into bowls and topping with the beef mixture. Garnish with green onions.
