- Fresh basil for garnish
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until translucent, about 3 minutes.
- Increase heat to medium-high. Season chicken thighs with salt and pepper, then add to the skillet. Cook until golden brown on both sides, around 5-7 minutes per side.
- Stir in rinsed rice, canned tomatoes (with juice), and chicken broth. Bring to a gentle boil while scraping any bits from the pan.
