  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning blend
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until translucent, about 3 minutes.
  3. Increase heat to medium-high. Season chicken thighs with salt and pepper, then add to the skillet. Cook until golden brown on both sides, around 5-7 minutes per side.
  4. Stir in rinsed rice, canned tomatoes (with juice), and chicken broth. Bring to a gentle boil while scraping any bits from the pan.
  5. Sprinkle in Italian seasoning, adjusting salt and pepper to taste. Reduce heat to low, cover tightly, and let it simmer for 20-25 minutes until rice is fluffy.
  6. Remove from heat and stir in fresh basil just before serving.
