Ingredients

  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup breadcrumbs (gluten-free if desired)

  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 large egg (or flax egg: 1 tbsp ground flaxseed + 3 tbsp water)
  • 4 whole grain or gluten-free buns

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions. In a large bowl, mash the drained black beans until chunky.
  2. Add cooked quinoa, breadcrumbs, herbs, spices, and egg (or flax egg) to the mashed beans. Mix until everything is well combined.
  3. Form the mixture into patties about ½ inch thick. If too crumbly, add more breadcrumbs.
  4. Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown and crispy.
  5. Assemble on toasted buns with your favorite toppings like lettuce, tomato slices, or avocado.
