- 1 can black beans (15 oz), drained and rinsed
- 1 cup cooked quinoa
- 1 cup breadcrumbs (gluten-free if desired)

- 2 tsp cumin
- 2 tsp smoked paprika
- 1 large egg (or flax egg: 1 tbsp ground flaxseed + 3 tbsp water)
- 4 whole grain or gluten-free buns
Instructions
- Rinse quinoa under cold water and cook according to package instructions. In a large bowl, mash the drained black beans until chunky.
- Add cooked quinoa, breadcrumbs, herbs, spices, and egg (or flax egg) to the mashed beans. Mix until everything is well combined.
- Form the mixture into patties about ½ inch thick. If too crumbly, add more breadcrumbs.
- Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown and crispy.
- Assemble on toasted buns with your favorite toppings like lettuce, tomato slices, or avocado.
