  • 1 cup orzo pasta
  • 2 cups canned crushed tomatoes

  • 3 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 2 bay leaves
  • 4 cups low-sodium beef broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes), then add minced garlic.
  2. Increase heat and brown the beef chunks on all sides for about 8-10 minutes.
  3. Stir in crushed tomatoes, oregano, bay leaves, salt, and pepper; simmer for an additional 5 minutes.
  4. Pour in beef broth to cover the meat fully. Bring to a gentle boil, reduce heat to low, and simmer for about one hour.
  5. After an hour, stir in orzo pasta and cook according to package instructions (around 10-12 minutes) until al dente.
  6. Adjust seasoning if needed and garnish with fresh parsley before serving.
