Ingredients
Scale
- 2 lbs beef chuck, cut into bite-sized pieces
- 1 cup orzo pasta
- 2 cups canned crushed tomatoes
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 3 tbsp extra virgin olive oil
- 2 tsp dried oregano
- 2 bay leaves
- 4 cups low-sodium beef broth
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions

- Increase heat and brown the beef chunks on all sides for about 8-10 minutes.
- Stir in crushed tomatoes, oregano, bay leaves, salt, and pepper; simmer for an additional 5 minutes.
- Pour in beef broth to cover the meat fully. Bring to a gentle boil, reduce heat to low, and simmer for about one hour.
- After an hour, stir in orzo pasta and cook according to package instructions (around 10-12 minutes) until al dente.
- Adjust seasoning if needed and garnish with fresh parsley before serving.
Notes
- For added nutrition, consider incorporating veggies like carrots or bell peppers.
- Letting the stew rest before serving allows flavors to meld beautifully.
