Description

Egg Roll in a Bowl is a quick and flavorful dish that captures the essence of traditional egg rolls without the wrappers. Packed with fresh ingredients, it’s perfect for busy weeknights!

Ingredients

Scale
  • 1 lb ground chicken
  • 4 cups coleslaw mix
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • Cilantro (optional) for garnish

Instructions

  1. In a large skillet over medium-high heat, cook ground chicken until browned and no longer pink.
  2. Stir in minced garlic and grated ginger; sauté for about 1 minute until fragrant.
  3. Add coleslaw mix and chopped green onions; stir-fry until cabbage wilts but stays crunchy (about 3-4 minutes).
  4. Pour in soy sauce and drizzle sesame oil; mix well to coat all ingredients.
  5. Remove from heat and garnish with cilantro if desired. Serve warm in bowls.

Notes

  • Feel free to swap out ground chicken for tofu or tempeh for a vegetarian option.
  •  Add extra veggies like bell peppers or snap peas for color and crunch.
