Description

Colcannon Mashed Potatoes are a creamy, flavorful side dish that combines tender greens with buttery potatoes. Perfect for any occasion, these mashed potatoes promise comfort in every bite.

Ingredients

Scale
  • 2 pounds Russet potatoes
  • 2 cups chopped green cabbage
  • 4 tablespoons unsalted butter
  • 1 cup whole milk
  • Salt and pepper to taste
  • ¼ cup chopped chives or green onions

Instructions

  1. Peel and chop the Russet potatoes into uniform pieces. Rinse under cold water.
  2. Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
  3. In a separate pan, melt 2 tablespoons of butter over medium heat. Sauté chopped cabbage until soft, about 5-7 minutes.
  4. Return drained potatoes to the pot; add sautéed cabbage, remaining butter, and whole milk. Mash until desired consistency is reached.
  5. Season with salt and pepper. Fold in chives or green onions before serving warm.

Notes

  • For extra flavor, consider adding finely chopped garlic or fresh herbs.
  •  You can substitute kale for cabbage for a different twist.
  •  Ensure potatoes are well-drained to avoid watery mashed potatoes.
