- 2 cups chopped green cabbage
- 4 tablespoons unsalted butter
- 1 cup whole milk

Instructions
- Peel and chop the Russet potatoes into uniform pieces. Rinse under cold water.
- Boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
- In a separate pan, melt 2 tablespoons of butter over medium heat. Sauté chopped cabbage until soft, about 5-7 minutes.
- Return drained potatoes to the pot; add sautéed cabbage, remaining butter, and whole milk. Mash until desired consistency is reached.
- Season with salt and pepper. Fold in chives or green onions before serving warm.
