Ingredients

  • 3 cups cooked day-old rice
  • 2 tablespoons vegetable oil
  • 2 cloves fresh garlic, minced
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tablespoons low-sodium soy sauce
  • 2 green onions, chopped
  • 2 eggs, beaten
  • 1 teaspoon sesame oil

Instructions

  1. Prepare all ingredients: chop vegetables and have everything ready.
  2. Heat vegetable oil in a wok over medium-high heat until shimmering.
  3. Sauté minced garlic for about 30 seconds until golden.
  4. Add mixed vegetables and stir-fry for 3-4 minutes until tender.
  5. Push the veggies to one side of the pan, add beaten eggs, and scramble until just set.
  6. Combine cooked rice with the sautéed mixture, pour in soy sauce, and stir to coat evenly.
  7. Drizzle with sesame oil before serving.
