Ingredients

  • 2 tbsp garlic and ginger paste
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp korma spice mix
  • ¼ cup fresh cilantro leaves, chopped
  • 2 tbsp vegetable oil or ghee
  • Salt and pepper to taste

Instructions

  1. Heat the oil or ghee in a large pan over medium heat. Add the chopped onions and sauté until soft and translucent (about 5 minutes).
  2. Stir in the garlic and ginger paste; cook until fragrant (about 1 minute).
  3. Add chicken thighs to the pan, searing until golden brown on all sides (approximately 8 minutes).
  4. Mix in korma spice mix and coconut milk; stir well to combine.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes until chicken is cooked through and tender.
  6. Garnish with fresh cilantro before serving over basmati rice or warm naan.
