Instructions
- Heat the oil or ghee in a large pan over medium heat. Add the chopped onions and sauté until soft and translucent (about 5 minutes).
- Stir in the garlic and ginger paste; cook until fragrant (about 1 minute).
- Add chicken thighs to the pan, searing until golden brown on all sides (approximately 8 minutes).
- Mix in korma spice mix and coconut milk; stir well to combine.
- Reduce heat to low, cover, and simmer for 20-25 minutes until chicken is cooked through and tender.
- Garnish with fresh cilantro before serving over basmati rice or warm naan.
