- 2 eggs (optional, for added protein)
Instructions
- Rinse the cauliflower and cut it into florets. Pulse in a food processor until it resembles rice (about 10 pulses).
- Heat oil in a large skillet over medium heat. Sauté minced garlic for about 30 seconds, then add diced carrots and peas. Cook for 3-4 minutes until veggies are tender.
- Stir in the cauliflower rice and cook for an additional 5-7 minutes until tender but slightly crunchy.
- Drizzle soy sauce and sesame oil over the mixture, stirring well to combine flavors.
- If using, push the mixture to one side of the skillet, crack the eggs into the empty side, scramble until cooked through, then fold everything together.
- Sprinkle sliced green onions on top before serving.
