Ingredients

  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced (any color)
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 large egg (or 1 tbsp flaxseed meal mixed with 2.5 tbsp water for vegan option)
  • ¼ cup fresh cilantro, chopped (optional)
  • 2 tbsp olive oil for frying

Instructions

  1. Gather all ingredients and finely chop the onion and bell pepper.
  2. In a skillet over medium heat, sauté the onion and bell pepper in olive oil until soft (about 5 minutes).
  3. In a large bowl, mash the black beans using a fork or potato masher; leave some chunks for texture.
  4. Stir in the sautéed onion and bell pepper along with breadcrumbs, egg (or flaxseed mixture), cumin, chili powder, garlic, and cilantro until well combined.
  5. Shape the mixture into patties about ½ inch thick.
  6. Heat more olive oil in the skillet over medium-high heat and cook each patty for 4-5 minutes per side until golden brown.
