- 1 cup breadcrumbs (plain or seasoned)
- 1 medium yellow onion, finely chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced (any color)
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 large egg (or 1 tbsp flaxseed meal mixed with 2.5 tbsp water for vegan option)
- ¼ cup fresh cilantro, chopped (optional)
- 2 tbsp olive oil for frying
Instructions
- Gather all ingredients and finely chop the onion and bell pepper.
- In a skillet over medium heat, sauté the onion and bell pepper in olive oil until soft (about 5 minutes).
- In a large bowl, mash the black beans using a fork or potato masher; leave some chunks for texture.
- Stir in the sautéed onion and bell pepper along with breadcrumbs, egg (or flaxseed mixture), cumin, chili powder, garlic, and cilantro until well combined.
- Shape the mixture into patties about ½ inch thick.
- Heat more olive oil in the skillet over medium-high heat and cook each patty for 4-5 minutes per side until golden brown.

- For added flavor, include shredded carrots or additional spices to suit your taste.
- Store leftovers in an airtight container in the fridge for up to four days; reheat on a skillet to retain crispiness.
