- 2 tsp dried thyme (or fresh if available)
- 2 bay leaves

Instructions
- Chop the vegetables into bite-sized pieces.

- Add chopped onions and minced garlic; sauté until the onions are translucent (around 4 minutes).
- Stir in carrots and potatoes along with thyme and bay leaves. Pour enough beef broth to cover the ingredients and bring to a gentle simmer.
- Cover and reduce heat to low. Let it simmer for 1.5 to 2 hours until the beef is fork-tender, stirring occasionally.
- Taste and adjust seasoning with salt and pepper before serving hot.
