Description

Savor the vibrant explosion of flavors in these Beef Burrito Bowls, featuring tender beef, fresh veggies, and zesty toppings for a satisfying meal.

Ingredients

Scale
  • 1 lb lean ground beef
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup bell peppers, sliced (mix of colors)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (optional)
  • 2 cups lettuce, shredded
  • 1 avocado, diced or guacamole

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks.
  2. Drain excess fat and add taco seasoning; stir for 1-2 minutes until fragrant.
  3. Cook rice according to package instructions and fluff once done.
  4. Stir in rinsed black beans into the beef mixture and warm for 3-5 minutes.
  5. Sauté sliced bell peppers in olive oil until softened (about 5 minutes).
  6. Assemble your bowls: layer rice at the bottom, then add beef mixture, black beans, sautéed peppers, cheese, lettuce, salsa, avocado/guacamole, and sour cream as desired.

Notes

  •  For a lighter option, swap rice with quinoa or cauliflower rice.
  •  Customize toppings to suit your taste; consider adding corn or jalapeños for extra flavor.
