  • 1 can (15 oz) black beans, rinsed
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream or Greek yogurt
  • ¼ cup fresh cilantro, chopped (optional)
  • 2 lime wedges

Instructions

  1. Sauté the diced onion and minced garlic in olive oil over medium heat until translucent.
  2. Add the ground beef; cook until browned, about 5-7 minutes.
  3. Stir in taco seasoning; simmer for 2-3 minutes to enhance flavors.
  4. Cook rice according to package instructions.
  5. In the last five minutes of cooking rice, add chopped bell peppers into the skillet with beef to soften slightly.
  6. Assemble bowls by layering rice, topped with the beef mixture, black beans, and cheese.
