Ingredients

  • 1 cup cooked sushi rice
  • 2 nori sheets
  • 1 ripe avocado, sliced
  • 1 small cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame seeds
  • Sriracha (optional)

Instructions

  1. Clear your kitchen counter and gather all ingredients.
  2. Rinse the sushi rice until the water runs clear, then cook according to package instructions. Allow it to cool slightly.
  3. On a nori sheet, spread an even layer of sushi rice using wet hands, leaving one inch uncovered at one end.
  4. Layer avocado slices, cucumber, and shredded carrot on top of the rice.
  5. Roll tightly from the covered edge to the uncovered end, sealing it with a bit of water.
  6. Slice the roll into bite-sized pieces with a sharp knife.
