Ingredients

  • 4 medium Russet potatoes (about 1.5 lbs), cut into ¼-inch sticks
  • 4 cloves fresh garlic, minced
  • ½ cup fresh grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Wash and cut the Russet potatoes into uniform sticks about ¼-inch thick.
  2. Soak the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Drain and pat dry the soaked potatoes. In a bowl, toss them with olive oil, minced garlic, salt, and pepper until evenly coated.
  5. Sprinkle freshly grated Parmesan cheese over the seasoned potatoes and toss again to coat thoroughly.
  6. Spread the fries in a single layer on your prepared baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
