- 4 medium Russet potatoes (about 1.5 lbs), cut into ¼-inch sticks
- 4 cloves fresh garlic, minced
- ½ cup fresh grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Wash and cut the Russet potatoes into uniform sticks about ¼-inch thick.
- Soak the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Drain and pat dry the soaked potatoes. In a bowl, toss them with olive oil, minced garlic, salt, and pepper until evenly coated.
- Sprinkle freshly grated Parmesan cheese over the seasoned potatoes and toss again to coat thoroughly.
- Spread the fries in a single layer on your prepared baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
