- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tsp dried Italian herbs (basil, oregano, thyme)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare ingredients: Mince garlic and halve cherry tomatoes.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.
- In the same skillet, sauté garlic until fragrant (about 30 seconds). Add spinach and cherry tomatoes; cook until spinach wilts and tomatoes soften.
- Stir in heavy cream and Parmesan cheese; mix until cheese melts. Add dried herbs and simmer for 3-5 minutes until sauce thickens.
- Return chicken to the skillet, allowing it to soak in the sauce for an additional 1-2 minutes before serving over pasta or rice.

- For added flavor variations, substitute spinach with kale or add sun-dried tomatoes.
