Description

Creamy Tuscan Chicken is a comforting dish featuring succulent chicken breasts enveloped in a rich, creamy sauce with fresh spinach and sweet cherry tomatoes. Perfect for any dinner occasion!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Mince garlic and halve cherry tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.
  3. In the same skillet, sauté garlic until fragrant (about 30 seconds). Add spinach and cherry tomatoes; cook until spinach wilts and tomatoes soften.
  4. Stir in heavy cream and Parmesan cheese; mix until cheese melts. Add dried herbs and simmer for 3-5 minutes until sauce thickens.
  5. Return chicken to the skillet, allowing it to soak in the sauce for an additional 1-2 minutes before serving over pasta or rice.
