Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain rice (white or brown)
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then sear until golden brown on both sides. Remove from skillet.
  2. In the same skillet, sauté minced garlic and dried thyme until fragrant (about 1 minute).
  3. Stir in chicken broth and heavy cream, mixing thoroughly until combined. Allow the sauce to thicken slightly.
  4. Return the browned chicken to the skillet along with uncooked rice, ensuring everything is coated in the sauce.
  5. Cover and simmer on low heat for approximately 20 minutes or until the rice is tender and has absorbed the liquid.
  6. Garnish with chopped green onions before serving.
