- 4 boneless chicken breasts (approx. 500g)
- 2 cups cremini mushrooms, sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped (for garnish)
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Slice the mushrooms and mince the garlic.
- In a large skillet over medium heat, heat olive oil and butter. Season the chicken breasts with salt and pepper and cook until golden brown (5-7 minutes per side). Remove from skillet and set aside.
- In the same skillet, add sliced mushrooms and minced garlic; sauté for about 3-4 minutes until softened.
- Pour in heavy cream and chicken broth, stirring to combine while scraping any bits from the pan. Let simmer for about 5 minutes until slightly thickened.
- Return the cooked chicken to the skillet and allow to simmer for an additional 5 minutes.
- Garnish with chopped parsley before serving with rice or pasta.
