Ingredients

  • 4 boneless chicken breasts (approx. 500g)
  • 2 cups cremini mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Slice the mushrooms and mince the garlic.
  2. In a large skillet over medium heat, heat olive oil and butter. Season the chicken breasts with salt and pepper and cook until golden brown (5-7 minutes per side). Remove from skillet and set aside.
  3. In the same skillet, add sliced mushrooms and minced garlic; sauté for about 3-4 minutes until softened.
  4. Pour in heavy cream and chicken broth, stirring to combine while scraping any bits from the pan. Let simmer for about 5 minutes until slightly thickened.
  5. Return the cooked chicken to the skillet and allow to simmer for an additional 5 minutes.
  6. Garnish with chopped parsley before serving with rice or pasta.

  • Toss in spinach at the end for extra color and nutrition.
