Description

Ingredients

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

  3. In another bowl, whisk eggs and mix in grated zucchini and corn. Combine with dry ingredients until just mixed.
  4. Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil, leaving space between each fritter.
  5. Fry for 3-4 minutes on each side until golden brown and crispy.
