Instructions
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a bowl, mix flour, baking powder, salt, and pepper until combined.
- In another bowl, whisk eggs and mix in grated zucchini and corn. Combine with dry ingredients until just mixed.
- Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil, leaving space between each fritter.
- Fry for 3-4 minutes on each side until golden brown and crispy.
