  • 2 pounds Yukon Gold potatoes
  • 1 cup mayonnaise
  • 1 cup diced celery
  • ½ cup finely chopped red onion
  • ¼ cup chopped fresh dill
  • 4 hard-boiled eggs (optional)
  • Salt and pepper to taste

Instructions

  1. Wash and quarter the Yukon Gold potatoes. Place them in a large pot, cover with cold water, and bring to a boil.
  2. Add salt to the boiling water and cook the potatoes until fork-tender, about 15-20 minutes. Drain and let cool.
  3. In a mixing bowl, whisk together mayonnaise, dill, salt, and pepper.
