- 2 pounds Yukon Gold potatoes
- 1 cup mayonnaise
- 1 cup diced celery
- ½ cup finely chopped red onion
- ¼ cup chopped fresh dill
- 4 hard-boiled eggs (optional)

Instructions
- Wash and quarter the Yukon Gold potatoes. Place them in a large pot, cover with cold water, and bring to a boil.
- Add salt to the boiling water and cook the potatoes until fork-tender, about 15-20 minutes. Drain and let cool.
