Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, whisk together flour, cocoa powder, baking soda, and salt until combined.
- In another bowl, mix eggs, sugar, vegetable oil, and vanilla extract until smooth.
- Gently fold in the shredded zucchini into the wet mixture.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; lumps are acceptable!
- If desired, fold in chocolate chips for extra chocolaty goodness.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before transferring to a wire rack.
