  • 2 cups fresh spinach
  • 2 tbsp curry powder
  • 1 can (14.5 oz) diced tomatoes, in juice
  • 1 cup vegetable broth
  • Juice of 1 lemon

Instructions

  2. 2. Add minced garlic and grated ginger; cook until fragrant (about 1 minute).
