- 8 corn tortillas

- 1 tsp cumin
- 1 tsp chili powder
- 1/2 cup vegetable oil (for frying)
- Sour cream (for serving)
Instructions
- In a large bowl, mix shredded chicken, onion, cilantro, cumin, chili powder, and cheese until combined.
- Warm corn tortillas in a dry skillet over medium heat until pliable.
- Place about two tablespoons of filling onto each tortilla and roll tightly without tearing.
- Heat vegetable oil in a frying pan over medium heat. Fry taquitos seam-side down for about 3-4 minutes per side until golden brown.
- Remove from oil and drain on paper towels. Serve hot with sour cream or guacamole.
Notes
- For added flavor, consider including diced jalapeños in the filling.
- Store leftovers in an airtight container for up to three days. Reheat in the oven at 350°F for about 10 minutes.
