Description

Ingredients

  • 2 cups shredded chicken (cooked)
  • 8 corn tortillas
  • 1 cup cheddar cheese (freshly grated)
  • 1/2 cup onion (finely chopped)
  • 1/4 cup cilantro (chopped)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup vegetable oil (for frying)
  • Sour cream (for serving)

Instructions

  1. In a large bowl, mix shredded chicken, onion, cilantro, cumin, chili powder, and cheese until combined.
  2. Warm corn tortillas in a dry skillet over medium heat until pliable.
  3. Place about two tablespoons of filling onto each tortilla and roll tightly without tearing.
  4. Heat vegetable oil in a frying pan over medium heat. Fry taquitos seam-side down for about 3-4 minutes per side until golden brown.
  5. Remove from oil and drain on paper towels. Serve hot with sour cream or guacamole.

Notes

  • For added flavor, consider including diced jalapeños in the filling.
