- 1 lb boneless, skinless chicken thighs
- 1 cup plain whole-milk yogurt
- 2 tbsp fresh lemon juice
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp paprika
- Salt and pepper to taste
- 4 pita breads or 2 cups cooked rice
- 2 cups fresh vegetables (lettuce, tomatoes, onions)
- Garlic sauce or tahini sauce for drizzling
Instructions
- In a bowl, mix yogurt, lemon juice, minced garlic, cumin, coriander, paprika, salt, and pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least one hour or overnight.
- Preheat grill or skillet over medium-high heat. Grill chicken for about 6-7 minutes per side until golden brown and cooked through. Let it rest for five minutes.
- Slice the chicken into thin strips. Serve wrapped in pita with veggies and a drizzle of sauce or over rice.
